Pretty Spring Cupcakes

My daughter and I were looking for a fun snack to bring to church. We wanted to bring something cheery after the long, cold winter we had just been through. We came up with the idea of make cupcakes decorated for spring. They turned out to be a hit. They brought a smile to people’s faces and the kids at church loved the decorations.

These pretty spring cupcakes are easy and fun to decorate. Make them for snack time, a school bake sale or a spring-time birthday party.

Ingredients:

  • Spring Cupcakes1 package of white cake mix, eggs, vegetable oil and water as per cake mix instructions.
  • 1 tup fluffy white icing
  • 18-24 paper muffin cups
  • Jelly beans
  • Red twizzler pull and peel licorice or any rope licorice.

Spring CupcakesDirections:

  1. Bake cupcakes as directed on package. We made 18 full size cupcakes.
  2. Allow cupcakes to cool and ice them.


Jelly Bean Flower Cupcake: To make the jellybean flower cupcake we placed six jellybeans around the top of the cupcake and cut one jellybean in half to make the centre of the flower.

Licorice Flower Cupcake: We used to single strings of licorice to form the petals of the flower and used half a jellybean to hold the licorice flower in place on the cupcake. To secure the centre jellybean put a dab of icing on the cut end.
